Why, hello there Spring..

Spring is officially here!!!! And with that means that those wonderful beautiful breezy nights are upon us as well. This called for a balcony makeover & I was only happy to obliged.

Not bad for a mini weekend project, huh? I need a few more plants..."Me" proof plants. Any suggestions?

It's Wok Time Baby!


I woke up this morning craving PF Chang’s lettuce wraps. I’d like to thank my friend J for that. The nearest PF Chang’s is a good 30 minutes away and if you don’t already know me…the kitchen is about the farthest I’ll go for food. Yes, I am that lazy. So I did a quick Pinterest search & came up with this copycat recipe. The recipe is pretty easy & super tasty.  Despite the long ingredient list, you can throw this together in about 30-45 minutes. 




Ingredients
- 8 dried shiitake mushrooms
- 1 tsp cornstarch
- 2 tsp dry sherry
- 2 tsp soy sauce
- 2 tsp water
- salt and pepper to taste
- 1½ lbs boneless, skinless chicken, chicken breasts, chopped into bite size pieces
- 5 tbsp vegetable oil
- 1 tsp fresh minced ginger
- 2 cloves garlic, minced
- 2 green onions, minced
- 1 x 8 oz can bamboo shoots, minced
- 1 x 8 oz can water chestnuts, minced
- Chinese crunchy lomein noodles

Sauté Sauce
- 2 tbsp oyster sauce
- 1.5 tbsp water
- 1 tbsp cooking sherry
- 1 tbsp soy sauce
- 1 tbps hoisin sauce
- 2 tps cornstarch
- 1 tsp sugar
- 1 tsp sesame oil
- Butter lettuce leaves, or any preferred lettuce 

Instructions
-Cover mushrooms with boiling water, let stand 30 minutes then drain. Cut and discard woody stems. Mince mushrooms. Set aside.
-Mix all ingredients for cooking sauce in bowl, and set aside.
-In medium bowl, combine cornstarch, sherry, soy sauce, water, salt, pepper and chicken.
Stir to coat chicken thoroughly. Stir in 1 tspn oil and let sit 15 minutes to marinate.
-Heat wok (or large skillet) over medium high heat. Add 3 tbsp oil, then add chicken and stir fry for about 3-4 minutes. Set aside.
-Add 2 tbsp oil to pan. Add ginger, garlic, and onion; stir fry about a minute or so.
-Add mushrooms, bamboo shoots and water chestnuts; stir fry an additional 2 minutes.
-Return chicken to pan. Add sauté sauce to pan. Cook until sauce thickens.
-Spoon chicken mixture into lettuce leaf and roll.

Maybe this will save you a trip next time you have a ridiculous craving!

Angels

It happens like this. One day you meet someone and for some inexplicable reason, you feel more connected to this stranger than anyone else- closer to them than your closet family. Perhaps this person carries within them an angel- one sent to you for some higher purpose; to teach you an important lesson or to keep you safe during a perilous time. What you must do is trust in them- even if they come hand in hand with pain or suffering- the reason for their presence will become clear in due time.

Though here is a word of warning- you may grow to love this person but remember they are not yours to keep. Their purpose isn’t to save you but to show you how to save yourself. And once this is fulfilled; the halo lifts and the angel leaves their body as the person exits your life. They will be a stranger to you once more.

The secret ingredient is........


My awesome sister gifted me with the most amazing gift this past week. A KITCHENAID STANDING MIXER!! We named her Betty. She’s pretty nifty. Anywho, after getting Betty, I knew I had to speed up this search of the perfect chocolate chip cookie so that I could get my bake on! After hours of scouring blogs, recipe indexes, and of course, Pinterest, I found Kelsey over at KelseysAppleADay. She adds a secret key ingredient to making these cookies the chewiest, fluffiest, most amazing cookies. EVER.

Ingredients: 
3/4 c. unsalted butter, softened 
3/4 c. brown sugar 
1/4 c. granulated sugar 
1 egg 
2 tsp. vanilla extract 
2 c. all purpose flour 
2 tsp. cornstarch (*THE SECRET INGREDIENT!!!)
1 tsp. baking soda 
1/2 tsp. salt 
1 c. bittersweet chocolate chips

Directions:
1.  Preheat oven to 350 degrees F.
2.  In the bowl of a stand mixer fitted with a paddle attachment, cream together butter and sugars until fluffy and light in color. Add egg and vanilla and blend in.
3.  Mix in flour, cornstarch, baking soda and salt. Stir in chocolate chunks.
4.  Using a standard-sized cookie scoop or tablespoon, drop dough onto a prepared baking sheet.  Bake for 8-10 minutes, until barely golden brown around the edges.  (The tops will not brown, but do NOT cook longer than ten minutes.)
5.  Let cool, on the sheet, on a wire rack for five minutes.  Remove from baking sheet and let cool completely.  Makes approximately 3 dozen, or 12 massively huge cookies. 

Eat one (three or four) warm with a glass of iced cold milk!

Northern Fish Products


Strolling down the waterfront this afternoon made me realize how much I’ve missed living by the water. It in no way compares to California, but it’s pretty amazing in it’s own wonderful Washington way. The three of us decided to bundled up & go on a search for some fresh fish & chips. We stumbled upon Northern Fish Products, an old-fashioned specialty fish market with quite an amazing view for their backyard! The service was wonderful, great friendly staff, and great portions!

Neiman Marcus Bars


Neiman Marcus does clothes, shoes, accessories etc like no one does. Now they’re even taking over the bakery world?! These are Neiman Marcus bars and they. are. AMAZING. They're very rich& chewy & decadent, almost like a kicked up brownie. It has a vanilla cake bottom, and a sweet crunchy creamy cheese topping. 




Ingredients
1 box Betty Crocker yellow cake mix
1 stick butter, melted
3 eggs
1 block Philadelphia cream cheese
4 C powdered sugar

Instructions
Preheated oven to 325 °  
Beat 1 egg, butter, cake mix
Pat into a 9x13 dish
Mix soft cream cheese and 2 eggs
Stir in powdered sugar
Spread over cake mix
Bake for about 45 minutes until done
*It may still jiggle a little right in the middle, it will continue to cook a little after you remove it from the oven. You don't want the edges to get overdone.

You have to have a glass of milk with these. Or try them hot with a scoop of ice cream. Or if you’re like my sister & I, have one with milk, then go back & have the second with icecream!

Duke's Chowder House


My sister & I have always had a special place in our hearts for Duke’s. We’ve always started (& ended) the trip off with a few Grapefruit Nirvanas & their delicious Jr. cheeseburgers. Normally we’d end at Duke’s in Tukwila after a long day of shopping, but today we visited Duke’s at Tacoma’s waterfront. The amazing food + the awesome view = our new favorite location!


Today’s pig out session included:
Local Penn Cove Steamers in Mac & Jack’s beer

crispy fried calamari with Tequila lime aïoli and wasabi aïoli

New England style creamy clam chowder

Jr. cheeseburgers with Tilamook’s extra sharp cheddar & crispy potato wedges

 & of course, Grapefruit Nirvanas with sugared rims (x4)!

I'd like to rewind & do that meal again.
